In the first of three exclusive interviews with participating chefs, we talk to chef Wilson Fam, the driving force behind Shanghai Magic, which has been recommended in the Michelin Guide Hong Kong Macau 2017.

What was your reaction to being listed in the Michelin Guide?
When I learned about this I yelled 'Oh my god! Really? Are you sure?' I was so thrilled and felt fabulous.

What would you be if you weren’t a chef?
If I were not a chef, I think I would become a graphic designer.

What is your restaurants' most popular dish?
The Shanghainese soy marinated cod fish.

What is your idea of food heaven and hell?
Food heaven – Real food made with fresh ingredients cooked by chefs with passion. Even it’s just a plain congee if it’s cooked well, for me that is a food heaven too.
Food hell – Junk food or food that isn’t cooked with the heart of the chef.

What is the strangest food you’ve eaten?
Paddy worm (禾蟲 )!

For whom would you most like to cook?
My lovely family, with no doubt!

If you could prepare one last meal, what would it be?
I would cook dishes using my mom and grandma’s recipes because they were my childhood favourite foods of all time: Hakka dishes: Yam dumplings; pan-fried salted fish and pork patty; and handmade noodles with braised mushrooms and minced pork.
